Glop
After a week of indulging in a Bay Area food crawl with my husband I am now trying to get back to eating clean and healthy. One of the first things I made is something called Glop. My brother found this recipe years ago on a body building site. This is a great recipe that is easy and healthy, but most importantly is that it tastes great. The original recipe only had ground turkey, brown rice and salsa. Just for variety and flavor I usually add bell pepper and shallots. Either way this was one of those recipes that is flavorful and naturally gluten free. I usually make a batch of this and keep it in the refrigerator for a quick meal.
Recipe:
- 1lb. ground turkey(seasoned if desired)
- 1 red bell pepper diced(optional)
- 2 cups brown rice(cooked)
- 1 cup salsa
- Salt to taste
- Cottage cheese or avocado
Brown ground turkey. Add in bell pepper, cook on medium heat with turkey for 3 minutes. Add salsa and cook for 2 minutes. Add salt only if necessary. Add brown rice and mix together. Turn off heat and let sit for a few minutes. When ready serve with cottage cheese or avocado.
Enjoy!
