Chinese BBQ Style Roast Duck Breast
 

One of the most rewarding things about having to eat gluten free is the knowledge that if you want to make sure it's safe to eat you need to cook it yourself. That being said. Today I was finally able to produce a roasted duck breast that is very reminiscent of the roasted ducks served in Chinese BBQ shops. As every gluten free person knows, it will never be the same but it will sometimes be better and you have the knowledge that you can make it yourself. 
 
Recipe:
  • 2 Boneless Duck Breast (or 2 Duck Legs)
  • Salt to Taste

Marinade:

  • 2 Tbsp. Raspberry Jam
  • 2 Tbsp. Honey
  • 3 Tbsp. Tamari Soy Sauce
  • 1 Tsp. Chinese Five Spice Powder
  • 1/4 Tsp. Ground Star Anise



Salt the duck breast. Mix all marinade ingredients together.  Pour marinade over duck breast and make sure to coat duck breast entirely with marinade. Best way to do this is in a plastic ziploc bag. Place marinated duck breast in the refrigerator for 3 hours or over night.  Heat oven to to 400 degrees. Take duck breasts out of the refrigerator.  When oven is ready place duck breasts in a roasting pan with metal rack. Pour in about  1/4 of water to bottom of roasting pan.  Place duck breasts on metal rack over the water.  This will keep the meat from drying out as you try to get the skin crisp and browned. Place in oven and set to roast for about 25 to 35 minutes depending on your oven and personal preferences. When duck breasts are done take out of the oven and let cool to room temperature before slicing and serving.
